It’s a sure-fire way to avoid overcooking or burning, using low, steady and indirect heat to cook food. A wood fire in one chamber causes heat to circulate through another cooking chamber with a tightly controlled airflow. The heat causes steam to rise, slowly cooking food, and the smoke produced adds those irresistible, rich flavours.
We love using the Smoker because it adds taste like no other and leaves anything cooked inside with a beautiful golden glow. This process, called the Maillard reaction, is not unique to cooking with a smoked grill, but the aromas produced are certainly distinct when cooking in this style. As smell makes up 80-90% of what we perceive as taste, this method is an irresistible way to ensure everyone’s taste buds are going before the food even reaches their table!
